The Santoku, Gyuto and Chef knife, each have their place in the kitchen. All are versatile tools in the kitchen and each have a very different feel. The Santoku are generally shorter than Gyuto's and Chef knives, coming in at 6" - 7", making them more user friendly if one wishes to have more mobility or have space restrictions. Typically, Santoku's have a much flatter edge profile, making them great for chopping, push/pull cuts and scraping food off the cutting board. This design falls towards the western variant by having a curve to the edge giving it more versatility in all tasks required in the kitchen as well as sporting a K-tip for precision work

This design of Santoku comes in either a hidden tang or a full tang (see "Hidden vs Full Tang" post)

Pictured above is the full tang variant where the handle follows the curves of the spine, as well as the choil. This gives the user the ability to rock the knife back and forth with comfort or allow the handle to conform to the grip of the hand while performing its tasks
