Gyuto
The Gyuto is considered the equivalent of the western Chef knife. It's typically between 8" - 10" in blade length and can come in longer or shorter lengths depending on the needs of the user. Gyuto's are narrower than their western counterparts and this variant features a straight edge with a slight curve, closer to the tip. This design allows for a combination of push/pull motions as well as rock cutting and has a K-tip for precision work. It's a great all around knife that will handle slicing meat or cutting vegetables
This design of Gyuto comes in either a hidden tang or a full tang (see "Hidden vs Full Tang" post)
Pictured above is the side and top profile of the full tang variant of the Gyuto. It showcases a balance between soft curves and aggressive angles to keep the handle mass towards the ricasso while minimizing weight with its sharp angles towards the base of the tang
It’s hidden tang variant features a similar handle profile, while including a choil with a steeper curve from the heel to the ricasso
Both are excellent options for anyone looking to dive into a Japanese inspired knife that gives them control over a wide range of kitchen tasks
